American breakfast is mostly made of eggs, bears, and something else such as bacon or sausage. I guess it could be traced to the traditional English breakfast. When I entered Mexico on Baja California I noticed that the Mexican breakfast was very similar to the American one: eggs, bees, maybe rice or salad, and some kind of meal. I attributed such affinity on breakfast menu to American influence in Mexican gastronomy. However, as I have kept going South and far away from the border, the offer for breakfast in restaurants is still the same, even in very rural communities with little-to-none contact with Americans. That fact made me discard the American influence. However, Mexican breakfast is not related with the Spanish-Mediterranean tradition either, nor with the availability of raw materials on the ground.

As I am ripping a bike for many hours a day, usually in very hot weather, so I have had to create my own and personalized breakfast. I tried sometimes with the Mexican one, but it does not work for me. It may provide the calories that I need, but produces a very heavy and slow digestion, with my legs moving up and down close to my beautiful as I pedal my journey. I do not like to start the day with an empty stomach either, but I discovered that liquidates and fruits is all that I need. This region, at that season of the year, is particularly convincing for my diet. Both sides of the road are full of banana, mango, and papaya trees. I do not need to buy my breakfast, there are so much fruit that I just need to collect some pieces from the ground. Fruit is so abundant now that, sadly, perfectly edible fruits are thrown away, or left behind uncollected on the fields.
